Methode Champenoise, the most popular and common method sparkling wine is made, was apparently developed by Dom (Pierre) Perignon a Benedictine Monk, born in 1638, near the Champagne district of France. Produced with their trademark Pinot Noir and Chardonnay grapes, their wine is fuzzy yet smooth, complex and exceptionally aromatic. Suggested retail is between $129 – $1,889 depending on the vintage and the varietal.
